Description

The building that houses the Rosa Bianca hotel-restaurant is located at the beginning of Piedicavallo, immediately before the branch of the provincial road for the hamlet of Montesinaro, on the main street, in an open and sunny position. The place is made up of three floors and has the typical characteristics of the ancient rural houses of the Upper Cervo Valley: the thick stone walls, the "lose" roof, and on the first and second floors it has preserved, on the façade, the characteristic stone balconies. The history of the Rosa Bianca, one of the oldest establishments in the Biella area, begins in 1856, when an inn was opened: inside the hotel the first license is still posted on the wall, registered to Pietro Peraldo fu Michele. He, like many other men from Valle Cervo, was a stonemason, therefore away from home working stone for several months of the year; the women of the family spent months in the mountain pastures with the cows: the inn was run by the wife. During those years the inn was frequented only by the men of the town and by those who went to the mountains, due to the fact that the carriage road leading to the valley floor had not yet been built. Meanwhile the tavern expanded and also became a tobacco shop. In 1884 the management passed to Pietro Peraldo's daughter, Glondina, who expanded the original tavern, turning it into an inn, still without the name "Rosa Bianca" which would later characterize it. Therefore, the first rooms began to appear in which to house people; the activity of the tavern continues, where the men of the town meet. The big change took place in the early twentieth century when the carriage road was built that united Piedicavallo to the other towns in the valley and to Biella: tourism slowly began to grow. Also in those years, when the road had yet to be completed, Glondina Peraldo saw a white rose plant growing nearby: the name of the inn was thus found. In 1947 the business passed to his daughter Annina, who held it for about twenty years; in 1968 the management went to his son Piero Janutolo, who ran the inn, which in the meantime had become a hotel, together with his wife Italina Antonacci. In the early nineties the place went to his daughter, who still manages it today, and who you can find welcoming you. The history of the "White Rose" has been going on, with the same family, since 1856. The hotel has ten quiet and comfortable rooms, with rustic furnishings and wooden floors; all with bathroom and television, some with balcony. The Rosa Bianca restaurant has two welcoming rooms for its customers, with rustic and warm mountain furnishings in which you can enjoy, in an intimate atmosphere, simple and refined home cooking with Biella and Piedmontese specialities. Depending on the seasons you will find typical dishes from the Cervo Valley which combine with those of the Biella and Piedmontese traditions. Among the specialties: hot appetizers; polenta and "moja", a typical dish originating from the Oropa and Cervo valleys, soft corn cream cooked for a long time in the cauldron, to which melted mountain toma is added, according to an ancient valley recipe; bagna cauda, ​​one of the most traditional dishes of Piedmont, that is, a very suitable sauce to be enjoyed in the winter period, cooked in a terracotta pan, in which to dip seasonal vegetables, in the Biella area it is personalized with the use of walnut oil instead of olive. In the spring period, ris and "malastre" (malastre are wild pansies) and ris and "barcuj", two risottos with mountain herbs, are offered. Furthermore you can find the Menabrea beer, originally from Biella, which is considered the best Lager type in the world.
